Storing Caviar

Caviar is fragile and delicate.

Once you receive your caviar, it must be immediately refrigerated. The ideal temperature to store the caviar 29 °F to 35°F.  Due to the salt content of caviar, the freezing temperature is below 29°F.

At home the ideal location is the coldest part of your refrigerator. Unopened the caviar will retain its freshness for about 3-4 weeks.

Once opened it is best to enjoy the caviar within 3 to 4 days.

DO  NOT  FREEZE

Freezing eliminates the delicate texture that gives the beads its popping sensation in the mouth. The firmness of the beads changes to becoming soft.
