Creme Fraiche is used to smooth out the saltiness found in caviar.
The caviar varieties of Lady Elena Caviar are Malossol which means lightly salted (approximately 3.5%). A small amount of Creme Fraiche is placed on a blini prior to the caviar adorning the blini. Add a little dab and experience the difference.
