Chateau De Fieuzal from the Pessac-Leognan region in Bordeaux France has produced another great white wine in the 2016 vintage.

The 2016 Chateau De Fieuzal white wine is a blend of 60% Sauvignon Blanc and 40% Semillon. The wine offers subtle aromas of white peaches, melon and some grassiness. This flows through the palate with softness and with tension. It has a long floral finish that has a touch of minerality shining through.This is a wine made to last many years.

The tension of the melded acidity and the mineraltiy makes this a great Lady Elena Caviar pairing.

Shirataki Shuzo Sake with Caviar

Shirataki Shuzo Sake with Siberian Sturgeon CaviarShirataki Shuzo is a Sake producer in Echigo Yuzawa in Nigata Perfecture. With Sake, the water is a key ingredient. The Shirataki Shuzo brewery is located n a area that receives a lot of snow. This snow in the spring time turns into a mineral laden source of water for the Sake production. From the mountain tops, the water flows through a seam of coal which acts a as a filter.and positively affects the taste and quality of the water.

Uonuma Noujun Junmai

Nigori no Jozen Mizuno Gotoshi Junmai Ginjo

They are different from each other and all very good The Namazaka is unpasteurized and is lively and fruit filled. The Uonuma has rice that is only polished to 80%. This seems to give the Sake a richness to it. The Noori is unfiltered and is rich but with a dry finish.

We brought along some Siberian Sturgeon caviar sustainably farmed in Italy.for a tasting.

2016 Macari Sauvignon blanc with Siberian Sturgeon Caviar

The Lady likes her New York State wines and the wines from Macari Vineyards are on that list.

May the LIFEFORCE be with you and in your glass. We are talking about the Macari Vineyards LIFEFORCE Sauvignon Blanc wine.

During the wine making process there are no oak barrels or stainless steel tanks used but there are concrete eggs. This 100% Sauvignon Blanc wine ferments in large egg shaped cement vessels. The use of the cement eggs doesn’t change the flavors of the fruit like oak can but gives the wine more body and more integration.

The wine offers light grassy and tropical notes. On the palate, it is fresh and smooth along with grapefruit pith and tropical undertones. The wine finishes with the refreshing acidity of a Life Force.

2004 Champagne Henri Giraud Argonne

The champagne is a blend of 75% Pinot Noir and 25% Chardonnay. These grapes are from vines of an average age of 50 years in Grand Cru vineyards in Ay. The wine is vinified in barrel and matured for twelve months in large barrels which are 30% new. Once bottled it then aged for eight to ten years before release.  Rich with soft minerally oxidative sherry like notes along with some freshness. The champagne is youthful as it still tightly wound.

The 2004 Sir Winston Churchill Champagne is a blend of mostly Pinot Noir with the balance considered a secret. What is known is that all the grapes are from old vines in Grand Cru vineyards and the wine is aged an average of 10 years prior to release.
