Franck Pascal Champagne is a micro estate of 4 hectares in the Vallee de la Marne following the biodynamic practices. The vineyards spans 20 parcels over 5 villages. Only indigenous yeasts are used and no sulfites are added in the vinification.
70% Pinot Meunier, 25% Pinot Noir, 5% Chardonnay
The champagne, on average rest 6 years in the cellar before release and has zero dosage. The champagne shows freshness and its minerality in its aromas along with the ripe fruits. On the palate there is a saline minerality giving softness to the ripe fruit and brioche.It finishes soft with some nutty red fruits.

A Champagne and Caviar tasting with 2010 Champagne JL Vergnon OG Grand Cru Brut Nature and the Siberian Baer Caviar (Siberian Sturgeon Caviar).
2010 Champagne JL Vergnon OG Grand Cru Brut Nature is made from 100% Chardonnay. These grapes are from a single 60 year old parcel in the Grand Cru vineyard of Chemin de Falvigny located on the border of Le Mesnil sur Oger. Before release, the wine was in bottle for 72 months.
We tasted this champagne with our Siberian Baer Caviar (Siberian Sturgeon caviar) that was sustainably farmed in France.
The champagne has tremendous freshness and beautiful floralnes. Its razor sharp finish cleanses the palate and leaves you refreshed.

From our Superior Series of caviar we are having the Champagne Caviar tasting with 2004 Champagne Henri Giraud Argonne with Siberian Sturgeon caviar. Our Siberian Baer (Siberian Sturgeon caviar) is sustainable farmed in Italy.
The champagne is a blend of 75% Pinot Noir and 25% Chardonnay. These grapes are from vines of an average age of 50 years in Grand Cru vineyards in Ay. The wine is vinified in barrel and matured for twelve months in large barrels which are 30% new. Once bottled it then aged for eight to ten years before release. Rich with soft minerally oxidative sherry like notes along with some freshness. The champagne is youthful as it still tightly wound.
This is a pairing where the minerality and nuttiness of each compliment each other before the cleansing of the palate.
Pierre Peters Cuvee de Reserve Brut NV Champagne and Caviar
Founded in 1919 by Camille Peters, Rodolphe is now managing this great small champagne house of Piere Peters.Their vineyards,of just over 19 hectares, is located primarily in the area of the “Côte des Blancs” and more specifically in the villages of Mesnil sur Oger, Oger, Cramant and Avize.

This 100% Chardonnay champagne is floral with fresh orange blossoms and nuttiness.On the palate there is lots of fruit with almonds, some toasted yeast with a mineral softness.It finishes with nuttines, lemon and a biting acidity with some salty minerality.

Champagne Moutard Cuvee des Six Cepages Brut and Siberian Sturgeon Caviar
Champagne Moutard is a family owned champagne producer with vineyards in Cotes des Bar. To create the Six Cepages champagne, the grapes are sourced from vineyards in the communes of Buxeuil and Polisy in the Cotes des Bar. With a name of Six Cepages you can expect that there are six grape varieties that make up this champagne. So, we have Pinot Noir, Chardonnay, Pinot Meunier, Pinot Blanc, Petit Meslier and Arbane blended in this champagne. For added complexity the wine is aged in neutral barrels and aged for 6 years sur lie and has a dosage level of 10g/l.
2008 Champagne Moutard Cuvee des Six Cepages Brut
This is an intriguing and complex champagne. It is filled with toasted nuts, brioche, plums, a red fruit melange that is all subtle and complex. The finish has toasted brioche with ripe fruits that linger.
